Extra virgin

During the olive oil production process, olives are pressed to extract as much oil as possible, producing different tiers of oil. Extra virgin olive oil retains much of the olive taste and is the highest-quality olive oil.

Cold pressed

All extra virgin olive oils are also cold pressed. This means that no heat or chemicals were used to extract the oil, and the temperature did not exceed 81.9 degrees. Cold pressing the olives ensures the oil retains its natural flavors, aromas and nutritional value. If the olive oil you’re buying isn’t cold pressed, it’s going to be a lower-quality product.


As the name suggests, unrefined olive oil hasn’t been processed or treated after pressing—the oil was bottled immediately after the olives were pressed. You may even see bits of olive flesh in a bottle of unrefined olive oil, but that’s just a sign of quality. If olive oil is refined, on the other hand, it’ll be easier to blend with other oils.
