The study goes on further to single out olive oil as a key factor in our body’s response: “These reductions can be partially attributed to extra virgin olive oil (EVOO) consumption which has been described as a key bioactive food because of its high nutritional quality and its particular composition of fatty acids, vitamins and polyphenols.”

This means that while we often spend our time avoiding fat in foods, in this case it’s actually the fat in olive oil that makes this happen. Extra virgin olive oil has high amounts of monounsaturated fatty acids and moderate amounts of saturated and polyunsaturated fatty acids.

Cooking with olive oil
